thank you for your reply. I just wanted to mention that I have added
last week a few items to the ManipCols package which could be of some
interest for you : there is one to convert automatically a text table to
a Latex tabular environment (and an item to undo if you hold the option
key down). There is another one to do the same with Html code.
Concerning Latex maybe it already exists : I wrote it because I do not
know where  it could be.
Concerning Html there is already such a tool in Html utilities but my
undo item  also handles nested tables and inserts new lines and columns
to preserve the global structure.
These new procs work whatever the current column separator is.
My proc however does not handle nested Latex tables.
I did not send it to the list but if you want to try it, it is on my Web
